Boccalone is a Class Act
Those of you who know me are probably not surprised that my first real post on my website has to do with sausage. What may be surprising is that I have a good reason to write about it.
About a month or so ago I was in San Francisco for work and I decided to stock up on some soppressatas from Boccalone since I missed them terribly (I was a member there until I moved away). I still haven't found a good salami shop here in Austin – suggestions welcome!
Anyway, I didn't actually get around to eating them until last week and they had gone bad. Really bad – smelled like the fish I dissected in 7th grade. I wasn't sure what the problem was but I emailed the good folks over at Boccalone and asked what could have happened. Bad batch? Did I leave it in a bad place? Was the few degrees difference between San Francisco and Austin (inside, in the air conditioning, mind you) really the culprit?
Apparently, according to the authorities, salami are alive (!) and the mold must have turned at some point. In any case, Boccalone was gracious enough to offer to replace my salamis and I am very very pleased about that. I just got the motts and all is well. Thanks guys!
